Lentil Soup Italiano {THM : E Meal} #PropSwap Reveal

I have two reasons to be excited this Monday Morning. One – I get to share my first THM E Meal with you, and two – I get to show off the purdy things that my swap partner sent to me!

Food Blogger Prop Swap

I participated in the Food Blogger Prop Swap, hosted by Alyssa of EverydayMaven and Faith of AnEdibleMosaic and today is the day that everyone gets to show off their goodies!

I sent some things to Dorothy at Shockingly Delicious and sure hope she liked them!

I was thrilled to find out my sender was Isabel of Family Foodie.. She sent me two sweet bowls, a few darling plates, am awesome lil nicknack and some gorgeous linens, including the beautiful napkin featured with my yummy soup…..


This was my first stab at an E Meal on the Trim Healthy Mama Plan. I’ve gotten really comfortable with S meals, but I knew I had to get some E’s in there.


This was a wonderful, filling soup with amazing depth of flavor. I took the concept from the All Day Lentil Soup in the book, made it a much quicker stovetop soup, and changed the flavor profile.


We all loved it and I’m looking forward to making it again. Daniel has already requested it again!


Lentil Soup Italiano {THM: E Meal}

Yield: 8-10 servings

Serving Size: 2 cups


  • 1 pound dried lentils, rinsed
  • 3 c low sodium, fat free chicken broth
  • 3 c water
  • 2 c or 1 (28 oz) can no salt/sugar added crushed tomatoes
  • 1 large onion, diced fine
  • 2 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1/4-1/3 c nutritional yeast (optional, but recommended)
  • salt and pepper to taste


  1. add lentils to large pot with water and broth
  2. bring to a boil, reduce heat and cover until lentils begin to get tender (about 3-45 minutes)
  3. add tomatoes and seasonings and allow to simmer for another 45-60minutes, adding nutritional yeast after about 30 minutes
  4. adjust seasonings before serving

    This prop swap thing looked amazing. All week long I’ve been reading the posts and seeing what everyone got. Just love it.
    And this lentil soup looks amazing … love the flavors!
